Creamy Smoked Salmon Pasta {Video Recipe}

Creamy Smoked Salmon Pasta is a quick and easy pasta recipe ready in the time it takes the pasta to cook. Perfect for a romantic night in or a last minute meal for friends. Look out for smoked salmon trimmings in the supermarket to make this really cheaply.

Breaking the spaghetti in half before cooking makes it much easier when stirring through the other ingredients later on. This dish doesn't hang around - eat is as soon as it's on your plate!


Creamy Smoked Salmon Pasta

Ingredients:

  • 200g spaghetti

  • 1 tablespoon olive oil

  • 1 clove garlic, crushed

  • 1 courgette, halved and sliced

  • 100g crème fraiche

  • Juice of half a lemon

  • 100g smoked salmon slices, cut into thin strips

  • Fresh dill & remaining half a lemon cut into wedge to serve (optional)

Method:

  1. Break the spaghetti in half and cook it according to the instructions on the packet. This should take around 10 - 12 minutes.

  2. While the spaghetti is cooking, heat the oil in a large frying pan and stir fry the courgette and the garlic for around 4 minutes until the courgette is just cooked through but still has plenty of bite.

  3. When the spaghetti is cooked, add it to the courgettes and stir through the crème fraiche and lemon juice as quickly as possible. Use some of the cooking water from the pasta if you need to loosen the crème fraiche.

  4. Stir through the smoked salmon and serve immediately topped with dill and with extra lemon wedges.
