Leftover Turkey Hoisin Sauce Wraps - now this is a cracking little recipe for your leftover turkey this Christmas. Think of crispy duck and pancakes - those scrummy little pancakes which you fill with shredded duck, hoisin sauce, spring onion and cucumber in Chinese restaurants? Scale it up to a wrap, and swap the duck for leftover turkey. It's incredible.

The leftover turkey is simmered gently in hoisin sauce and a splash of water, so the meat becomes lovely and juicy - no dry bird here. I love the fact that these leftover turkey hoisin wraps are so far from a Christmas dinner - they are just perfect for boxing day, and they take minutes to make. Cut each wrap into four and you have quick and easy buffet food.

My top tip for leftover turkey is to prepare it the day before. You might not feel like stripping a carcass after a full on Christmas dinner, but it's so much harder, and unappealing, once it's been left in the fridge overnight. Leftover Turkey Hoisin Sauce Wraps

  • Makes: 8 wraps

  • Time: 20 minutes start to finish

  • Cost: 83p per wrap

  • Calories: 303 per wrap

Ingredients: 

  • 8 tortillas wraps

  • 350g leftover turkey, shredded or chopped

  • 8 tablespoons hoisin sauce

  • 6 tablespoons water

  • 6-8 spring onions, topped and tailed and sliced

  • Whole cucumber, peeled and cut into batons

  • Couple of handfuls of salad and / or coriander leaves (optional)

Method:

  1. Warm the tortillas in the microwave or the oven and cover with a clean damp tea towel to keep them warm while you prepare the leftover turkey filling.

  2. Place the leftover turkey in a frying pan along with the hoisin sauce and water. Slowly bring to the boil and reduce the heat to a simmer. Cook for around 5 minutes stirring frequently until the leftover turkey is coated with a sticky brown sauce that has reduced.

  3. Evenly distribute the hoisin turkey onto the warm wraps followed by the spring onions, cucumber and salad & coriander if using. Roll up the wraps tightly, slice each in half and serve immediately.
