Fat Free Tea Cake {Dairy-Free Tea-Flavoured Fruity Loaf}

This delicious fat free tea cake is packed with juicy tea-soaked sultanas which gives a lovely flavour. It’s also dairy-free. Make variations using earl grey or red bush tea. Add a few chopped nuts or use a dried mixed fruit instead of sultanas if you like.

Fat Free Tea Cake {Dairy-Free Tea-Flavoured Fruity Loaf}

Ingredients:

  • 300g sultanas

  • 2 tea bags

  • 600ml boiling water

  • 2 teaspoons mixed spice

  • 125g brown sugar

  • 2 eggs, beaten

  • 275g self raising flour

Method:

  1. In a large bowl, make some strong tea with the boiling water and the tea bags. Add the sultanas (leaving the tea bags in), cover and leave to soak over night.

  2. Remove the tea bags from the sultanas and drain off most of excess tea. Add the sugar, spice and eggs and mix until well combined.

  3. Add the flour little by little stirring well each time until the mixture just falls off a spoon and is not too sloppy. You may not need to use all of the flour, depending on how soggy the sultanas are.

  4. Pour the mixture into a greased loaf tin or cake tin. Bake in a pre-heated oven at 160 C / gas mark 3 / 140 fan for 90 minutes until a knife comes out clean. Leave to cool before slicing.
