Welsh Cakes

With Saint David's Day around the corner there's no better reason to make these quick, easy and really tasty cakes. Welsh Cakes are a cross between pancakes and scones and are traditionally cooked on a bakestone or griddle pan. However, I use a frying pan and they turn out great.

Providing you with easy step-by-step instructions, back by popular demand, up and coming chef Joshua shows you how to make the perfect, well almost perfect Welsh Cake...

Time:  10 - 15 mins prep, 10 mins cooking

*based on 20 cakes

Makes about 20

  • 225g self raising flour
  • 100g butter (plus extra for greasing)
  • 75g sugar (plus extra for sprinkling)
  • 75g sultanas
  • 1 teaspoon mixed spice
  • zest of ½ an orange
  • 1 egg
  1. Rub the butter into the flour to make breadcrumbs. Add the sugar, sultanas, spice, orange zest and egg. Mix well to combine while looking very pleased with yourself. The mixture should be a smooth dough.
  2. Sprinkle flour onto the work top, rolling pin and your clean jumper. Roll out the dough until it is a 1/2 a centimetre thick. Cut the Welsh Cakes into circles with a cookie cutter or glass. Alternatively, roll the dough into ping pong ball sizes with your hands, then squash each ball into a cookie shape 1/2 a centimetre thick.
  3. Melt a little butter in a large frying pan and fry the Welsh Cakes in batches turning once. They will need 2-3 minutes on each side until they are caramel brown. Add more butter to the pan between batches if necessary. Get your mum to do this bit (as the pan in hot hot burn) while you play with the spice rack and empty cumin onto yourself and the floor. They should look like this...
  4. Sprinkle with sugar while still warm and munch. You can eat Welsh Cakes cold as they are, or split with butter and jam like a scone. Scrum-a-licious!

Love Love Love this - grace and I will have a go! She prefers to throw dried tarragon on the floor rather than cumin!!!

Hi Becky! Glad to hear I'm not the only one with a herb-throwing toddler! Please have a go at the Welsh Cakes, I'm not gonna lie to you (in 'ness' accent!) they are lush! x
