So it's May, and it's pouring with rain, but here's something to warm you up - FIVE comforting main meals and TWO lots of yummy baked goodies for less than £25.

If you fancy following this meal plan, all you need to do is print off the shopping list and use it for your weekly shop. All the hard work has been done for you, so enjoy.

Weekday Mains

Monday - Leek and Potato Soup

Time:  10 mins hands on time + 20 mins cooking time
Cost:  39p per serving
Calories:  176 per serving

This easy recipe for leek and potato soup makes a comforting, hearty and healthy meal served with crusty bread and butter. Serve topped with crispy bacon or chorizo for a twist. Stir through a little crème fraîche for a more creamy soup.


Tuesday - Easy Beef & Tomato Stew & Mash

Time:  20 mins prep + 2 - 6 hours cooking
Cost:  £1.64 per serving (inc. mash)
Calories:  532 per serving (inc. mash)

Serve with mash. Pop in the oven at lunchtime on a low heat and it will be perfect at dinnertime. You could also eave it on the hob for a couple of hours the night before and re-heat before serving. Use whatever vegetables you have that need using up.


Wednesday - Easy puttanesca: Spicy tuna and tomata pasta

Time:  20 minutes
Cost:  59p per serving
Calories:  497 per serving

Puttanesca (tuna and tomato pasta) is a tasty and quick mid-week pasta. It's ready in 20 minutes so perfect when you're in a hurry. Kids may not been keen on the chilli, olives or capers so just leave them out and stir through some soft cheese instead.


Thursday - Cheesy Bacon and Pesto Baked Gnocchi

Time:  15 mins prep + 15 mins baking
Cost:  91p per serving*
Calories:  553 per serving*

Frozen broccoli is a great standby for this easy gnocchi recipe. Ready made gnocchi is very inexpensive and easy to use. It's a great alternative to pasta and makes a comforting baked main course. A simple salad makes a great side accompaniment to this dish.


Friday - Meatballs with Tomato and Red Pepper Sauce

Time: 15 mins prep + 20 mins cooking
Cost:  £1.42 (including spaghetti)
Calories: 716 per serving (including spaghetti)

A perfect end to any week - especially if you have friends over for dinner. These meatballs are simply delicious and very easy to make. If you're short for time the meatballs can be prepared in advance kept in the fridge until you're ready to cook them.

 

Sweet Stuff

Here's a couple of sweet treats to get you through the week:

Chewy Oat and Raisin Cookies

Time:  10 mins prep + 10 mins baking
Cost:  6p per cookie
Calories:  144 per cookie

These American Style Chewy Oat and Raisin Cookies are really quick and easy to make. Kids will enjoy rolling the raw cookie dough into balls (and eating it!) ready to bake in the oven. Eat them warm with ice-cream for an quick dessert. They are also great for a lunch box treat.

 

Raspberry and White Chocolate Muffins

Time:  10 mins prep + 20 mins baking
Cost:  14p per muffin
Calories:  223 per muffin

Frozen raspberries work brilliantly in these Raspberry & White Chocolate Muffins as they don't get squashed during mixing. Substitute the white chocolate chips for any chocolate that you have that needs 'using up' - just chop with a sharp knife to create homemade chocolate chips.
