Sweet Potato and Carrot Soup
This delicious sweet potato and carrot soup is warming, filling, tasty and healthy. I add beans as well to provide protein so it's a good soup for vegetarians. The combination of the sweet potato and carrot give it a lovely sweet flavour which kids will enjoy. Tweak the herbs and spices to your liking.
Time: 10 minutes preparation + 20 minutes cooking

Sweet Potato and Carrot Soup
Serves 4:
- 1 red onion
- 2 x garlic cloves
- 1 teaspoon of dried rosemary
- 1 teaspoon dried thyme or sage
- 1 teaspoon cayenne pepper
- 2 x carrots (around 200g)
- 2 x sweet potatoes (around 500g)
- 2 x 400g cans of either haricot, borlotti, cannellini or butter beans
- 1 litre hot chicken or vegetable stock
- Oil for frying
- Salt & pepper to taste
Method: Sweet Potato and Carrot Soup
- Dice the onion, crush the garlic and fry in a little oil along with the garlic, herbs and spice.
- While the onion is frying, peel and dice the carrot and sweet potatoes. The carrot pieces need to about half the size of the sweet potato pieces. This is because carrots take longer to cook so by making them smaller they should be ready at the same time as the potatoes).
- When the onion is soft, add the carrots, potatoes and drained beans to the pan. Pour over the hot stock, season to taste, bring to the boil and then simmer, with a lid on for about 20 minutes or until the vegetables are soft.
- When the vegetables are soft, blend the soup using a hand blender over a low heat until reasonable smooth but still with some texture. Serve with crusty bread.

Great recipe. Similar to mine, except I make mine with fresh basil instead of thyme or sage. And I use a pinch of ground ginger! :)
Sweet potatoe is a big hit with Grace (she adored gourmet mum sweet mash/norm mash combo on top of sheppards pie) so i will be making this soup!! x
