Yesterday was my nephews birthday and I made him a Mr Tumble Spotty Bag Cake. It’s the last cake I’ve made in my old kitchen which is being completely renovated. We’re also turning half our garage into a utility room, re-doing the garden and re-locating our downstairs toilet to make a bigger hall. The work starts Monday and is going to take about two months. I’m beyond excited 😆. Anyway, back to the cake - was three layers of vanilla sponge sandwiched & coated with vanilla buttercream and wrapped in sporty-yellow fondant. Fondant used to be my nemesis but I’ve learned thick layers are more forgiving. Check my highlights for more on this cake. Topper is from @dindindies - bespoke wooden sprayed blue metallic. Who enjoyed the Royal Wedding at the weekend? It was so much fun living in Windsor the past week! So much going on in town leading up to the big day - we loved it! We did stay home on Saturday to watch the wedding on our new telly (2 year old smashed the old one with a lightsaber - every cloud eh). Was absolutely rammed in town and on the long walk, too much for the boys, who are not that fussed about weddings in general. I made this Lemon & Elderflower Drizzle Cake for us to enjoy during the ceremony, inspired by Harry & Meghan’s choice of wedding cake. It’s absolute heaven - zesty lemon meets floral elderflower in a soft sponge with a crunchy crust. The recipe is completely foolproof as well - link in bio if you fancy giving it a go. Have also included some baking tips on how to make a really good sponge cake 😋
What do you get for a 1 year old these days? Especially when they’re a second/third/fourth (!!) child with all the clothes and toys they need! My littlest nephew is 1 today and I bought him this gorgeous wooden personalised flag sign to hang in his room from @dindindies which is partly sprayed with silver paint. It’s even more gorgeous in real life - beautifully handmade with care. I’m also madly in love with the packaging which makes a really nice gift box. Shout out to my dad 🙌🏻 who is Portuguese 🇵🇹 and awesome 😎 we celebrated his birthday today with apple crumble cake (recipe on the blog, it’s good - it’s like an apple crumble crossed with a cake, it’s really light, and amazing with custard).
