This cake is made of three layers of the ultimate chocolate cake from @bbcgoodfood website, sandwiched and coated with chocolate ganache. The drip is white chocolate ganache coloured pink. Hooray! The sun came out this afternoon so the boys went to the park with their school friends! They have been having a sleepover at granny's, was very quiet without them. They're making up for it now 😂
When life gives you lemons... or something vaguely resembling ricotta in my case... make spinach and sort of ricotta pasta. So today I fell out with a cheese making kit. Check out my Instagram stories if you want a blow by blow account. I thought it would be a fun and wholesome activity for the summer. We tried to make mozzarella, it was a disaster. Kids ended up watching telly while I tried rescuing something between mascarpone and ricotta. If I hadn't of used 4.5 litres of milk and 37 bowls and pans making it I probably would have chucked it. I have copious amounts of fresh spinach from my dads allotment. I ditched the slugs, gave it a good wash and finely slice it up before sautéing it with some garlic. Added some cooked pasta and peas, a tiny pinch of nutmeg and a tablespoon of homemade "cheese" and voila, a tasty healthy meal. Peas are sweet I chuck them with spinach if it's a little bitter. The cheese made it a bit creamy. 18 month old wolfed it down. I added some chilli flakes and a little Parmesan to mine. The big boys had the spinach and cheese mix inside pancakes leftover from breakfast made into quesadillas - they loved them! So everyone was happy with their dinner, which makes me feel a bit better because I have so much washing up! Still have so much spinach - anyone got any ideas?
