New recipe on the blog this morning - easy, delicious, healthy tuna pate - SlimmingWorld friendly and safe for pregnant ladies to eat! Just blitz up some things in a food processor and done. And it’s delicious. It’s my kind of go to lunch thing at the moment, with loads of carrot sticks. (Stops me eating my body weight in snacks - you know when you just get a bit stressed and want to eat? 😂 So far this morning my 2 year old has scribbled on the sofa with a biro, set the fire alarm off by toasting crackers and scoffed peanut butter from the jar with an ice cream scoop before returning it to the cutlery drawer. How does he think of these things? 🙄 Anyway, hairspray gets biro off a leather sofa 😀 Was I the only one who didn’t know this?
Feeling like an absolute hero for making a weekly meal plan* this morning. Today we’re having baked trout & roast veggies which I can stick in the oven before collecting big boys from drama club. Tomorrow is chicken fajitas - a massive fave in our house at the mo. Wednesday is a sort of picnic tea because big boys have dance club which finishes quite late and they’re always famished - cheese and courgette muffins will be involved. Thursday’s tuna pasta bake always takes me back to my student days (tuna was much cheaper back then 😂). Dunno how Fridays pork & chorizo stew will go down after the boys watched Babe for the first time this weekend (“Fly, can I call you mom?” 😭😭😭) but homemade pizzas on Saturday and Sundays “roast with the most” are bound to be a hit. Still unsure what “the most” actually is at this point in time, but got 6 days to figure that out. Much to conquer this week. What are you up to? So if your birthday party doesn’t fall on your birthday that means two birthday cakes right...? We had a football party with 20 kids for our budding Ronaldo at @powerleague Slough this morning. Football pitch cake was required for this party which required me wresting with 3kg of green fondant (see stories for more 💪🏻). I’m not a fan of fondant, it looked far from perfect but that’s not always the point right? Underneath that green was three layers of Oreo vanilla sponge - current favourite birthday cake recipe. Not overly sweet, light and spongy. CHOCOLATE DOME CAKE 😅🤪😆 SWIPE ⬅️ FOR VIDEO OF THE BIG REVEAL! if you caught my insta stories today you will have seen me sweating over Joshua’s birthday cake - something extra special for his 10th Birthday - a chocolate dome cake inspired by the most recent @britishbakeoff #GBBO series. The dome was of dark, milk and white chocolate, melted and brushed over an inflated balloon which chilled in the fridge until set. It’s easy for me to type that in a sentence, but it was the baking equivalent of trying to pin jelly to a wall. The dome went over a chocolate brownie cake, sandwiched & coated with Oreo buttercream, topped with chocolate ganache drip and decorated with Oreo truffles and Oreos and Oreo crumbs (many forms of Oreos). Once the cake was safely under the dome, Joshua simply poured over hot salted caramel sauce to reveal the his birthday cake. His response? CHOCOLATE DOME CAKE 🤗😀🤪 ‼️ If you caught my Instagram stories yesterday you would have seen the drama of this chocolate dome cake! I have saved it as a highlight if you’re interested in seeing how I made it 🤪😰😂 Joshua turned 10 yesterday, so I wanted to make a really epic cake to mark the occasion. I was inspired by the chocolate dome cakes they made on the latest series of The Great British Bake Off. So I baked two chocolate brownie cakes, sandwiched them and covered them with Oreo buttercream, dripped over chocolate ganache and topped it with Oreo truffles, Oreo cookies and Oreo crumbs (basically Oreos in different forms). I brushed melted chocolate (milk, dark and white to give that kind of swirling effect, which didn’t quite go to plan) over an inflated balloon and put it in the fridge to get very hard. (That’s easy for me to type in a sentence, but it was quite stressful 😂). When the chocolate was set, I deflated the balloon and carefully trimmed the chocolate dome to sit perfectly over the cake. All Joshua had to do was pour over hot salted caramel sauce for the big reveal. He absolutely loved it, but asked where the candles were 😰 Challenge for next year I guess 😂
And just like that he was 10. Feels like yesterday that a dark-haired squidgy super hungry 9lb 3oz baby boy splashed into my arms in the birth pool at Wexham. Everyone says the grow up fast - it literally flies by. Could not be more proud of my biggest boy Joshua. Master-builder, super-chef, star-baker, football-crazy, joke-telling, video-making very special boy. Joshua - we love you more than words can say. We are proud of you. You’re amazing. You’re a huge blessing to our family and to many others. God has an awesome plan and purpose for your life. The best is yet to come. 💗 Hope you enjoy your pizza 🍕 and chocolate cake 🎂 P.S. Are you guilty of stealing your little ones snacks? I sure am - but Organix Goodies taste so good, and they’re healthy too, I can’t help but swipe them for myself. Their gingerbread men were made for dunking in tea, lentil hoops are the perfect partner for your favourite tipple and don’t get me started on the fruit and seed bites. Are you a snack stealer?
