Rachel's Risotto

If you like risotto but can't bear the thought of standing and stirring, try this easy risotto recipe! It's ready in 20 minutes, an amazing 600 calories per serving, contains 2 of your 5 a day and tastes absolutely delicious!

This super quick, simple recipe is dedicated to beautiful little Rachel Emma who was born two weeks ago to our lovely friends Rich & Sue! Congratulations guys! x

Time:  5 - 10 minutes preparation + 10 - 15 minutes cooking
Cost:  £1.39 per serving
Calories:  563 per serving

Serves 4:

  • 300g easy cook rice
  • 2 tablespoons olive oil
  • 400g chicken, cut into 1 x 2cm sized strips roughly
  • 3 cloves garlic, crushed
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 large leek, sliced in half once lengthways and then finely sliced
  • 320g frozen peas
  • 120g low fat soft cheese
  • Salt & pepper to taste
  1. Put the rice on to cook according to the instructions on the pack while you prepare the other ingredients. Do not let the rice overcook!
  2. In a large saucepan (which will eventually fit all the ingredients) heat the oil in the pan and fry the chicken along with the garlic and dried herbs until cooked through and brown. This will take around 5-6 minutes.
  3. Add the chopped, thoroughly chopped leek and cook for around 3-4 minutes until just soft. Add the frozen peas and season to taste. Cook for a further 2 minutes.
  4. Add the cooked rice to the chicken, leeks and peas. Combine well over a medium heat. Finally, take the pan off the heat and stir through the soft cheese. Serve immediately.

Tips: You can buy soft cheese which already has garlic and herbs mixed in with it - use this to save time if you prefer. This dish also works extremely well with leftover roast chicken. Just shred it or chop it into chunks and heat through.

GourmetMum made this for Sue and I just days after Rachel was born and what a treat it was. Not only did it save on cooking and washing that night, but it tasted fantastic. We munched through it in a split.
