Panini Pizza
If you are looking for a low fat pizza or healthy pizza then this is probably as close as it gets. This panini pizza is ready in 15 minutes and contains half the calories of a takeaway margarita. This recipe is for a basic cheese and tomato panini pizza but you can add toppings such as tuna, ham, chicken, peppers, sweetcorn or olives if you wish.
I've recently started doing a BTEC in Healthy Eating which is really helping me to put together healthy meals and understand which foods are healthy and which are not! Sharon is my teacher, she is brilliant and shows us how to make healthy, tasty and quick family meals which don't cost a fortune. This recipe is the first one we made in class together. The thing I love about Sharon's recipes is that they are usually ones you can make with your kids, which as Joshua gets older (he's just turned 3) he's getting more into. He loved making them and eating them and it wasn't quite as messy as baking shortbread cookies.
Sharon gave us a great tip - blend up different cooked vegetables in with the tomato sauce to smuggle vegetables into fussy kids! A piece of broccoli will just end up looking like herbs, and carrots will hide beautifully and give sweetness.
Time: 5 - 10 mins prep + 5 - 10 mins baking

Panini Pizza : Serves 3 (as a meal)
- 3 panini rolls
- 400g tin chopped tomatoes
- 4 cloves garlic, peeled
- 1 teaspoon dried mixed herbs
- 1 tablespoon tomato puree
- 75g reduced fat mature cheddar, finely grated
- Fresh basil to serve
- Pre-heat the oven to 200 C / gas mark 6.
- Cut the panini rolls in half lengthways and place on a baking sheet. Grate cheese finely using a parmasan grater.
- In a food processor, blitz the garlic. Add the chopped tomatoes, tomato puree and mixed herbs and blitz again until reasonably smooth.
- Spoon the tomato sauce over the panini rolls evenly. Top with grated cheese and bake for 10 - 15 minute until golden.
