Low Fat Strawberry Mousse {Egg & Dairy Free}

This is a really easy recipe for low fat strawberry mousse. It's a doddle to make and a mere 129 calories per serving. It's also egg free so suitable for kids and pregnant ladies. You can get the same light and airy texture you get from egg whites by giving it a good blast with an electric hand whisk. Using a mix of yoghurt and milk gives a nice creamy flavour and keeps calories down as well.

To make low fat raspberry mousse, just substitute the strawberries for raspberries. You can also easily make dairy free strawberry mousse by using soya milk and yoghurt. I leave the seeds in the strawberries but if you prefer, sieve your strawberry puree before combining with the other ingredients.

This low fat strawberry mousse can be made a day in advance. To make it look a bit special serve it in individual glasses with diced strawberries in the bottom and on top.


Easy Strawberry Mousse {Egg & Dairy Free}

  • Time:  15 minutes + chilling time

Ingredients:

  • 150g strawberry (frozen or fresh) washed and hulled

  • 200ml natural yoghurt (or soya yoghurt)

  • 100ml milk (or soya milk)

  • 1/4 teaspoon orange extract

  • 100g icing sugar

  • 1 sachet of powdered gelatine (which will set 570ml of liquid)

  • Strawberries to decorate (optional)

Method:

  1. Place the strawberries in a blender and blitz until smooth. Pour into a bowl with the yoghurt, milk, icing sugar and orange extract and mix well with an electric hand whisk for 5 - 10 minutes until well combined, light and airy.

  2. Sprinkle the gelatine onto 120ml hot but not boiling water from the kettle (as instructed on the packet) and whisk briskly with a fork until dissolved.

  3. Pour the dissolved gelatine into the other ingredients and whisk again with the electric hand whisk until thoroughly combined.

  4. Immediately pour the strawberry mousse into individual serving glasses and pop in the fridge for at least two hours until set.
