Fabulous Fat-free Tea Cake

This is as easy as easy receipes can get! This cake does exactly what is says on the tin, it contains tea, it doesn't contain fat, and it tastes fabulous.

Time:  10 minutes hands on time + 90 minutes baking time
Cost:  11p per slice
Calories:  211 per slice

Full Recipe

Makes about 12 slices

  • 300g sultanas
  • 2 teabags
  • 600ml boiling water
  • 2 teaspoons mixed spice
  • 150g brown sugar
  • 2 eggs, beaten
  • 250 - 300g self raising flour
  1.  Make some strong tea with the boiling water and the teabags. Pour the hot tea over the sultanas in a large bowl, leaving the teabags in. Cover them and leave to soak over night.
  2. The following day when you are ready to bake your cake, remove the teabags from the sultanas and add the sugar, spice and beaten eggs. Mix well until all the ingredents are well combined.
  3. Add the flour little by little stirring well each time until the mixture just falls off a spoon and is not too sloppy. You may not need to use all of the flour.
  4. Pour the mixture into a greased cake tin or oven proof dish and bake for about 1 - 1 ½ hours until a knife comes out clean. Enjoy with a cup of tea - fabulous.
