Easy Pancake Recipe

Pancakes are really easy to make, requiring only a few store cupboard ingredients. They are also really versatile since they can be sweet or savoury. This is my mum's pancake recipe and quite frankly it's still the best. She used to make us pancakes when we were kids and serve them with ice cream and squeezy chocolate sauce and they were delicious!

Makes around 10 pancakes

  • 150g plain flour
  • 2 eggs
  • 300ml milk
  • Pinch of salt and sugar
  • Sugar and lemon juice to serve
  1. Sift the flour and salt into a large bowl with a sieve so the flour can get some air. Make a well in the centre of the flour and break the egg into it. Add a splash of the milk.
  2. Whisk the egg and milk gradually incorporating the flour from around the edge of the bowl as you do so. Gradually add small quantities of milk whisking continuously to eliminate any lumps.
  3. Heat a little oil in a large frying pan until hot. Be careful not to use too much oil as this will spoil the taste of the pancake. I normally pour any excess oil into a saucer and use it to grease the pan between pancakes.
  4. Pour or ladle around 2 - 3 tablespoons of batter into the pan and tip the pan around so the batter coats the pan. It will only take around 30 seconds per side to cook, so check by lifting a corner of the pancake with spatula or fish slice to see if it's golden brown before flipping it.
  5. Serve warm sprinkled with lemon juice and sugar. Either fold them in half, roll them up, or fold into quarters. And there you have it, the easiest, tastiest pancake ever!

Tip: If you're making ahead, stack the pancakes on a plate and cover with cling film. Pierce the film, then reheat in the microwave for 1 min or until piping hot. 

Alternative Pancake Fillings

Apple pancakes - Add some grated lemon zest to the batter. Stew some apples in the microwave along with some honey or sugar. I like to add a few sultanas as well. Place the stewed apples on one side of the pancake and then fold in half. Serve sprinkled with sugar and a squeeze of lemon.

Oat, cinnamon & honey pancakes - This is a great tasting 'healthier' alternative using rolled oats. These gives the pancakes a nice nutty flavour and are especially nice topped with your favourite berrys and golden syrup.

Orange pancakes - Add orange zest to batter. Serve with orange juice & sugar - like the lemon & sugar but revamped.

Nutella pancakes - Spread Nutella on the hot pancake and then fold into quarters. Unbelievably good - especially with a dollop of ice cream! Add sliced banana to be healthy!

I am normally a honey, cinnamon sugar type gal! Definitely going to give Nutella a try though...
