Easy Carbonara Pasta

This is super easy budget recipe for a great tasting Carbonara – the famous cheese-y bacon-y spaghetti combo. It takes only 15 minutes to make from scratch and most of the preparation can be done while the spaghetti is cooking.

This simple Carbonara recipe is dedicated to my very special friend Del who is fun, fabulous and a far better cook than me! Here we are having fun at my 30th birthday party. Love you lots lady!

Time:  15 minutes from start to finish
Cost:  86p per serving
Calories:  688 per serving

This Easy Carbonara Pasta Serves 2:

  • 200g spaghetti
  • 3 rashes smoked bacon, fat removed and cut into thin strips
  • 150g mushrooms, sliced
  • 1/2 red onion, sliced
  • 1 garlic clove, crushed
  • 25g grated cheese
  • 1 egg, whisked
  • 1 tablespoon of oil for frying
  • Freshly ground black pepper to taste
  1. Break the spaghetti in half and cook as instructed on the packet.
  2. While the spaghetti is cooking, mix the beaten egg and grated cheese. Set to one side.
  3. Also while the spaghetti is cooking, fry the onion, garlic & bacon in a little oil in a large saucepan or wok until cooked.
  4. Just before the spaghetti is cooked, add the mushrooms to the bacon & onions and fry on a high heat for just one or two minutes until they are just cooked.
  5. When the spaghetti is cooked, drain and add to the bacon & mushrooms and stir well off the heat. Pour the egg & cheese mix over the spaghetti and stir well until the spaghetti is completely coated
  6. Return the pan to a low heat stirring constantly for one minute. Ensure that the spaghetti is well coated with the egg & cheese mixture and that the carbonara is piping hot throughout and that the egg is cooked but not scrambled and dry. Serve immediately.

Tried this the other night and it was great. I thought you needed cream for a carbonara and I never keep that in the house as I don't really like it, but this was fab!
