It’s a BOY!! 👑 Seems appropriate to be sharing this just after the announcement of Meghan & Harry’s new arrival!You might have caught me making this football cake on my stories over the weekend - will save to highlights incase anyone is interested in how I did it. I baked just over half the mixture in a metal bowl and the rest in a tin (ultimate chocolate cake from @bbcgoodfood - just doubled the quantity of the cake mix). When the cakes were baked and cooled I sandwiched and coated them with dark chocolate ganache (300g cream and 300g chocolate) which I smoothed lots and left to chill overnight. I covered the cake with white fondant (1kg rolled into 40cm circle approx) and decorated with black fondant pentagons stuck down with a little water. I used a knife to score lines to make it look more realistic. Check out highlights for more. (Maybe Meghan will be whipping it up this time next year for her sons first birthday 😀)

Made this apple crumble cake today and decorated it with apple crisps - see more in stories. It’s probably one of my favourite bakes in the world - think moist cinnamon flavoured sponge with chunks of apple and a crispy crumble topping. It’s insanely good with lashings of custard. It’s really a doddle to make and handy if you have four apples which are a tad soft for lunchboxes. I freeze peeled and chopped apples in the autumn and use them straight from the freezer in cakes like this. Link to recipe in bio if you fancy having a go.

Anyone made a gravity defying cake? I made my first one today (more on stories) using @maltesers and a couple of straws. Obvs mine is a pretty basic one and not very tall. Wasn’t that difficult to do apart from when they slide 😰 I would probably use melted chocolate to stick them on the straw next time as it sets harder and more quickly. Anyone else got any tips?

Mother’s Day weekend. Boys got to see cousins on Saturday and Sunday 💕

If you caught my stories yesterday you would have seen me baking these little mini egg topped brownie cakes for the school merit shop today. 55 of them left the house this morning looking pretty in ribbon-tied bags (I baked over 60 but obviously needed to keep a few back for photographing and, er, testing... just to make sure...) Normally I make the classic shredded wheat Easter nests with mini eggs on top, but this year I thought I’d tweak a brownie recipe, pour into muffin cases and shove the mini eggs into the brownie cakes when they come out of the oven so they ‘set’ with the mini eggs in. It worked a treat - I love the simplicity of it and the yummy gooey brownie instead of crunch-chocolate coated cereal. The only faff is getting runny brownie mixture into a muffin case 🤪 but the rest is so easy. Hope the kids at school enjoy them as much as I have. Will blog recipe soon. 🐣

There are some people I’d literally do anything for. My kids, followed closely by Mrs Elbrow - one of the greatest teachers on earth. She asked me last week if I would maybe be able to make her some hamentashen - I said yes before she’d finished her sentence, despite not having a clue what they were. Turns out they’re triangular shapes filled pastries usually associated with the Jewish festival of Purim. They represent Haman’s hat - who is the villain of the story (it’s very interesting, google it). I made my hamentashen with vanilla sweet pastry and a blueberry & orange jam filling. You might have spotted them on my insta stories yesterday. A few popped open in the oven and turned into sombreros, but most kept their shape. They tasted rather good, like a really nice jam tart. Can’t tag Mrs Elbrow, but if you know her, you’ll know she’s an absolutely legend. I’d make macarons for her. 🙌🏻
